Fryer safety production operation procedures
1. Preparation before starting:
1. The heat transfer oil furnace starts 30 minutes in advance.
2. Turn on the main power switch of the fryer.
3. Start the fryer rise button, check the mesh belt, scraper bearing and other transmission parts.
4. Check that there is no foreign matter in the machine, no water.
5 Install the oil filter paper correctly and adjust to ensure normal operation.
6. Check the peripheral piping of the fryer and the circulation system.
7. Press the down button to reset the fryer.
2. Boot:
1. Fill the fryer to the non-stick pan.
2. Press the heating power control switch on the power distribution cabinet.
3. According to the production needs, the person in charge of the equipment sets the parameters of the fryer oil temperature.
4 Turn on the scraper control power supply and filter oil, and circulate the pump system.
5. When the oil temperature rises above 150 °C, start the A mesh belt, B non-stick pan and the oil supply control. 6. At the end of the production, notify the oil furnace to turn off the heating system 10 minutes in advance.
7. At the end of production, notify the refrigeration to stop cooling 10 minutes in advance.
Fryer cleaning procedure
Cleaning steps:
1. Turn off the heating system and the refueling system.
2. Cool down and recover the oil to prepare the caustic soda.
3. Collect large pieces of dirt and oil slag in the trash can.
4. Raise the fryer and insert the bumper.
5. Open the A, B mesh belt with a high-pressure water gun to wash the entire oil pan, mesh belt, scraping strip, gear bracket, exhaust pipe, hood, filter and other dirty areas, and then carefully check the above places to ensure clean.
6. Fill the fryer with water, add to the caustic soda and heat to 95 ° C for 45 minutes. After the cooking is finished, drain the sewage.
7. Use a high pressure gun to wash the dirt and caustic soda in the fryer, carefully wash the oil pan, filter, and rinse the inner and outer cover until it is clean.
8. Prepare the concentration of 2-5% of the de-pull, raise the fryer, use the foam machine to sweep the foam from the top to the bottom of the fryer and other parts, cover the inner and outer surfaces of the equipment, and the foam residence time is 10-15 minutes.
9. Clean with a high pressure gun. Visually inspect all areas to check that the parts are clean, if not clean and re-clean.
10. After cleaning, close the drain valve, stop the belt running, and turn off the main power.
Fryer safety specification
1. When lifting the fryer, insert the bumper at any time to prevent the cover from falling.
2. Do not touch the hot parts directly with your hands.
3. The oil is slippery to prevent slipping and falling.
4. Electric control cabinet, motor, operation button should pay attention to prevent water ingress.
5. When you raise the fryer, you must ensure that there are no other tools and debris on the fryer cover.
6. All quick-release buckles, the gasket must be fastened to the pipeline to prevent loss.
7. Before cleaning, the valve and power switch must be closed. The power switch control cabinet should be covered with plastic to prevent the water heater from being short-circuited.
8. Pay attention to high temperature equipment to prevent burns. Fry time operators can't be off duty. 9. Clean the exhaust pipe once a week to prevent the oil from high temperature in the chimney causing fire caused by spontaneous combustion of the oil residue.
10. If caustic soda does not get on your skin, rinse immediately with running water for 15 minutes.
